He then honed his skills under Shirley Spear, the renowned previous owner of The Three Chimneys in Skye, helping them retain their three AA Rosettes. Since then he has been head chef at two Aberdeenshire hotels and brings 14 years of experience to his new role.

In 2012, Les joined Cruden Bay Golf Club as General Manager, having been a playing member of the club since 1970.

On joining the club, he progressed in further education within the Club Manager Association of Europe and in 2022, he successfully became one of only six Managers in Scotland to qualify as a Certified Club Manager, with only 66 people in Europe holding this certification.

Cruden Bay Golf Club was created on the 1099 battle site between the Scots and the Danes, by the Great North of Scotland Railway, which built a baronial style hotel, (the Palace in the Sands) with its own electric tram which ran between the hotel and the train station and an 18 hole Championship Golf Course opened in 1899.

The 5,290 Championship Course was designed by the most famous of Golf Architects Old Tom Morris, assisted by Archie Simpson and hosted many of the golfing greats of its time, many of them former Open Champions. Architects Tom Simpson and Herbert Fowler made changes to the course in the 1920’s after additional land was acquired close to the fishing village of Port Erroll. Within the Championship Course there lies a fantastic St Olaf 9 hole course, which has seen many changes in its layout over the years, and still offers a fabulous test of golf.
